I have never made tofu scramble before. This was my first attempt and a pretty successful one too!
I always thought tofu scramble had eggs; I guess you can always add eggs to it, but this recipe is EGGLESS!
It is such a quick and easy recipe!
87.5 g Pressed Tofu, chopped up into small cubes
1/4 Bell Pepper, chopped
Handful Broccoli Florets
2 White Mushrooms, sliced
1/4 cup Reduced Fat Cheddar Cheese
1/2 teaspoon Garlic, chopped
1/2 teaspoon Coconut Oil
Pinch of Cumin Powder
Pinch of Corriander
Pinch of Chilli Powder
Salt & Pepper to tate
Heat coconut oil and garlic in a skillet on med-high heat.
Add broccoli, peppers, mushrooms and tomatos.
Add tofu along with the cumin, coriander, chilli powder, salt, and pepper.
Stir to mix.
Lift skillet off the stove and mix in cheddar cheese. Stir until melted.
Serve. Easy. Enjoy 🙂
