you know it’s going to be a good day when….


I set my alarm about 30 minutes earlier this morning. My printer has been making a strange, loud hissing sound; consequently refusing to print anything. My intention in waking up early, was to leave the house bout 20 minutes earlier to use the printer at school. Usually I am rushing out the door in the morning; today I looked at the clock and thought I was getting late. I wanted to leave the house at 9:30, and this entire time I thought it was 9:45. GUESS WHAT! It was 8:45!! hahaha! How AWESOME IS THAT! Times like these are so reassuring – today IS going to be a good day! I can just FEEL IT! So I figured since I have 45 minutes to kill, I’ll spend it with you!
Yesterdays smoothie inspired todays breakfast: Nutty Chocolate Overnight Oats!

1/4 cup Instant Oats
1/2 cup Honey Greek Yogi
1 tablespoon Black Chia Seeds
1 tablespoon Almond Cashew Butter
1/2 tablespoon Nestle Chocolate Powder
1/2 cup Unsweetened Vanilla Almond Milk
1 packet Stevia

Last night I mixed all the above ingredients into a tupperware container, and set it into the fridge overnight.
This morning I splashed some almond milk on it to make it a little less thick and THOROUGHLY enjoyed it 😀
I had some fresh pineapple strips on the side. Yum-MY!

Peanut Butter Chocolate Chia Pudding


Can you tell I love peanut butter? Pretty much put it on everything!

I have been meaning to make Chia Pudding for a while now. I have seen soooo many recipes, but could never imagine what it would taste like, since chia seeds are virtually tasteless. If you don’t like bubble tea, or textured foods, you probably won’t like this. It’s got that tapioca-y goo-iness to it.

2.5 tablespoons Black Chia Seeds
1/2 tablespoon Peanut Butter
1/2 tablespoon Nestle Chocolate Powder
1/4 scoop Cookies & Cream Whey Protein Powder
1/2 cup Unsweetened Vanilla Almond Milk

Mix almond milk with chia seeds and set in fridge for 30 minutes until chia seeds are gelatinized.
Mix in peanut butter, chocolate powder, and protein powder.
Add a splash of almond milk if you find it too thick.
Eat 🙂

Okay, the pic isn’t the prettiest, but it tasted pretty good 🙂

It had a nice refreshing kick to it.
